This recipe is adapted from the Rebar cookbook. Lots of great recipes in there - check it out.
Basic vegetable stock
1 tbsp canola oil
1 yellow onion, roughly chopped
2 leeks, greens only, roughly chopped
12 cloves garlic, smashed
2 jumbo carrots, roughly chopped
4 celery stalks, roughly chopped
1 apple, roughly chopped
4 bay leaves
1 tbsp whole black peppercorns
1 tbsp coriander seeds
1 tbsp coarse sea salt
handful parsley
20 c water (make sure you have a huge stock pot!)
Saute the onions, leeks, carrots, and celery. Toss in the remaining ingredients, including the water, and bring to a boil. Simmer for 45 minutes. Strain and cool if not using immediately.
Store in the refrigerator for up to 3 days, or in the freezer for up to 2 months.
