Greens and grains salad, redux

I haven't been cooking much lately (as evidenced by my recent posting history). Bygones - I'm back. On Friday I threw together a quick salad that was a variant of a greens and grains salad that I riff on occasionally. This isn't too different, but I have to get into the groove of posting again so bear with me.

I recently read how black rice is considered to be a "supercharged" whole grain, so when I came across forbidden black rice in my local organic store I couldn't resist. (It is delicious, btw.) Add in the quinoa, fresh greens, and legumes, and this salad starts to look like a cure for cancer. Eating a bowl of this must have cancelled out at least a week of pre/post-holiday badness... right?

Greens and grains salad, redux

whack of arugula, chopped (wherefore art thou watercress?)
1 bunch cilantro, chopped
1 bunch flat-leaf parsley, chopped
handful mint leaves, chopped
1 large zucchini, sliced in fat matchsticks
1 bunch green onions, thinly sliced
1 jumbo shallot, minced
2 c quinoa
2 c forbidden black rice
2 c black eyed peas
juice of 2 juicy limes
olive oil
freshly ground sea salt, black pepper (to taste)

Combine all of the ingredients (up to and including black eyed peas) in a big bowl. Combine the remaining ingredients in a bowl and whisk to make a dressing. Add the dressing to the greens-and-grains mixture, and toss to combine.

  1. The Smoking Sister says: Too funny we both were out of luck on the watercress - must not be it's season? In any event, ditto on the yumma yumma, but oh how 'bad' can a sister vegan be post-holiday?
